Recipe: Apple Butter
When you go apple picking and return home with 20+ pounds of apples its time to get creative in the kitchen! I don’t love baking for two as it leads to us either over-indulging or something going to waste if we don’t finish it in time. Enter apple butter. This super easy recipe is a great use for any surplus apples you have on your hands this fall and as an extra bonus it makes your home smell amazing!
I used my trusty Le Creuset to make this, but any heavy duty pot or a slow cooker should work just as well. Just be careful to keep your cooking temperature low to keep your pot scrubbing time to a minimum!
Ingredients:
12-15 apples
1 tablespoon cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
1 tablespoon lemon
1/2 cup water
Directions:
Place water in the base of your pot. Chop apples into large chunks and place in the pot. Stir in lemon juice and spices. Cook on low for about an hour 6 hours. Allow to cool and blend in a high speed blender or with an immersion blender. (I have this one and love it.) Continue cooking until you have a thick compote. This took an addition 1-1.5 hours.
When your apple butter is nice and thick and a dark caramel color, allow it to cool, then store in a jar in your fridge for up to a week and a half.
Enjoy with your favorite bread or with your morning yogurt and granola.
